You’re right...and in Texas there is someone from the dealership who has to go to the DMV, pick up the dozens and dozens of plates for that week, get them back to the dealership where they are mailed out.
How much markup do you think there is in a new iPhone, tv, bicycle, shirt, or printer ink? Hundreds of percent. In a car? Maybe 12%. But for some reason everyone thinks the dealer isn’t entitled to keep any of that, yet you’ll pay $750 for a phone so you can play Candy Crush on it. gfys

Doc fee also pays to hire a courrier to take paperwork down to the DMV, stand in line for hours, and acquire your license plates. Although, I’m sure they’ll let you do that yourself...since you have extra time.
Two things I’ll never do...buy a car from craigslist, or own a XC90.
