Kosher is tricky though because that's not just a matter of leaving out some ingredients is it? It's my understanding that I could not prepare a kosher meal in my kitchen because my dishes/utensils/cookware has already been mixed in a non-kosher way.

You are not wrong. I have seen invitations that request the recipient to RSVP "regrets only" but that is the opposite of what these people were arguing.
