I'd also say that New Caprica also sowed the seeds for the Cylon Civil War... it was the last time the Cylons really did anything as a united front... afterwards there were Cylons who were more and less interested in humanity.
For me, the decision to settle on New Caprica was the real game changer. It ushered in quite a change in the characters and the style of the show that lasted the rest of the show.
