I'm fine with dairy milk. I don't eat meat so I'm already far ahead of where most people are at in terms of environmental impact. And there are so, so many things a person could worry about... imo, just pick what works for you, stick with it, and don't feel bad.
Like what csuram said: cornstarch is better in Asian sauces or places where dairy isn't already an ingredient. Otherwise, a lot of people are unnecessarily afraid of rouxes (plural sp?) so cornstarch is an "easier" or more "approachable" method.

I’ve never managed to get garlic cloves peeled that way, and certainly not by shaking gently. I make garlic confit every couple of weeks and end up peeling a few heads of garlic by hand. Even when I try the shaking trick I always have to give the cloves individual attention and any time saved is lost again.
