They do it so there is flexibility in editing - reaction shots, etc., can be mixed and matched between actual days. Similarly the Shark Tank sharks will tape multiple shows in the same clothes and then the shows are edited/reshuffled into separate episodes, so that each has a similar ratio of duds and successes.
