Both of those are actually tasty done right though, and 99% of the time use CO2. Nitrogen and hops straight up don’t mix well.

Nitro works for styles you want to be creamy/flat/maltier/less bitter(some stouts). CO2 works for any styles crisp/hoppy(most IPAs, most beer). Why the fuck anyone thought a flat IPA would be a good idea baffles me.
