I think you make some good points, though I would point out one important difference between serving expensive versus inexpensive food: As the price increases, so do the odds that you will be faced with absurd, unreasonable, and possibly humiliating demands from your customers.

Not only that but if you buy why does a great server at a crappy restaurant get a $2 tip on a $10 cheeseburger rather than a fancy restaurant where it could be double or triple that?
