I have set up my iPhone as an Exchange account using my Google account before, and synced multiple calendars using the http:// m.google. com/ sync page to set which ones went through the Exchange server. (explained here [www.google.com] I didn't realize it was iOS only, but that link does seem iOS oriented, only.
I use CalDAV to sync my colors, too: [lifehacker.com]
You can sync all of them. What device are you doing it on? If iPhone, go to [m.google.com] and choose what calendars to sync. If you are on an iPad, and can't do this on the iPhone, you have to use a browser that will spoof the mobile browser (like described here: [gigaom.com]
