Real servers/bartenders want the busy shifts. We know there is money to be made. It’s exciting to count your tips at the end of a shift then go spend it all with your fellow coworks at the dive bar across the street. We bitch when it’s too slow, too easy.

Unfortunately basic necessities are expensive. Rent, food, health insurance are insanely high. Even if Amazon double their workers wages, with taxes they would still be struggling.
