Again, this is just my opinion, but I think that the potatoes should cubed into smaller pieces (skin on or off, doesn’t matter) and that the “salad” part of the dish should be thicker. That is a crazy-looking potato salad. I don’t think that I’ve ever seen one that used small potatoes just cut in half. In my opinion, something like that shouldn’t even be considered potato salad, it’s just potatoes with dressing on them.
