Yeah, it must be conditioning at this point. But it’s button location more than letter association for me. The bottom button is “confirm/action/etc.”, the left button is “next”, the right button is “back/cancel,” and the top button is “heavy attack.”
I don’t know. I’ve had my Switch for years now, and the swapped cancel/confirm still bugs me.
100% agree, if I play one console longer than the other for a stretch I always fuck it up when I switch back to the other console.
I think they should also set the Y-axis to default to inverted if they’re going around making changes.

As far as I can tell some games have touch controls integrated and some require a controller. I only tried Minecraft Dungeons, but it had touch controls baked in that worked surprisingly well.
