I know some pizza scientists. The dough technology is pretty freakin' cool. leavening encapsulated with fats that melt at a specific temperature so the dough rises correctly every time in every oven. And yes, they hang out with Shaggy and Scoob all the time.

Not trusting a nutrition study is a good policy in general. Most of the studies are terrible with poor correlation and/or bad conclusions.
