Yes, correct etiquette is that pronouns apply throughout the person’s lifetime unless they request otherwise. Even if quoting an older article, it’s better to add a correction, for example “he was so excited about his gold medal” would be quoted as “[She] was so excited about [her] gold medal.”

Totally agree. It kind of just ruins any depth and texture to the characters.
