That's the one thing I feel like (aside from the poor dialog and second half) Far Cry 3 needed improving on: different weather scenarios. I've encountered rain maybe twice in my entire time playing it, and I feel like there could've been some fantastic missions where there was a storm or something taking place…

Well, you'd probably get NFL Network, which would mean you can watch at least two Thursday Night Football games, so yes and no. You don't need Sunday Ticket for ESPN, so you get MNF regardless (unless you don't have cable)
