I lightly cook whatever is going in with the grilled cheese, mainly because I want it to all be the same temp. Otherwise the bread will burn before the additional ingredients get hot. Another advantage to pre- grilling/pan -frying ingredients is it'll dry them out. This creates a nicer bond with the cheese.
