The best recipe for pumpkin pie I have ever tried is from Dorie Greenspan and it calls for caramelizing half of the sugar before adding it to the rest of the ingredients. Different flavour profile but same concept as this. Hmm, I wonder if I roasted the pumpkin AND caramelized the sugar??
