I do love artichokes, but too much work to be in the running for replacing the avocado. Plus, canned artichokes suck and fresh are WAY too much of a pain for simple toast.

Looks great. If you want another amazing eggplant recipe from a great chef give this a try. It’s worth not substituting and pinning down all of the ingredients if possible (i.e. green cardamom for black, or omitting the mango powder) because it’s just killer.
I just keep them for the kids to crunch on when they start whining that they’re hungry and it’s too close to dinner for a snack. This way, they feel they win because they got something out of me and i win because it’s one less thing in the trash.

I think craft IS perfect for this for the exact reason you give. Keystone drinkers want their beer at 3o degrees, something you’re not going to get with this. It can lower the temp about 30 degrees which in most circumstances would be great for craft beers.
I make a lacto-fermented salsa with them. Grated with white onion, garlic, and a little green chile, it’s fermented for about a week. Great on grilled fish steaks especially swordfish.
Big fan on the El Yucateco green sauce. Never had Kutbil-ik, though. Not sure that I’ve even seen it, but I’ll certainly keep an eye out!
Go get yourself a jar of Green Mountain Gringo (medium around my house) and a bag of Garden of Eatin chips (or Xochitl if you want something lighter in texture) and you’ll be set.
Hot sauce: depends on the application, but Crystal for a basic sauce. Valentina for Mexican-style sauce.
