I get freaked out about anaerobic bacteria when leaving anything (that is still sealed) out of the water bath for more than a few minutes. If you’re going to let something cool without an ice bath, I’d open the bag and let air get in.

Are you saying that you removed the cooked meat from the water bath and left it on the counter overnight, still sealed in the bag?
