Because Darryl and White Josh are functional adults, and watching a show about functional adults who talk through their issues before they can become Issues isn't as entertaining as Rebecca self-sabotaging and imploding her own best laid plans.

I think casting a woman could have 100% worked, if they'd gone for a more genderqueer look.
