Sushi made by the best sushi chefs in Japan have rice that fall apart. The rice isn't supposed to be packed tight together, so that the bite, the texture, etc. all feel nice together. Not sure why sushi that doesn't fall apart (which indicates to me that it is densely/tightly packed) is associated with "high quality".

You're paying for the sushi, not "the fish." If you only care about the fish, you should be buying the fish, not sushi.
