I’m a little late to arrive here, but could someone explain to me why this is ruled offside? How is this different than a player who gets free on a 1-on-1 with the keeper, has the ball partially deflected, but follows the ball into the net for the goal? I swear I’ve seen players take touches beyond the keeper/final

I think you are overlooking the fact that you had the arguably greatest keeper of today’s game (Neuer) and arguably the greatest keeper ever (Buffon) between the nets. That will mess with even the best striker’s composure.
