You can't quite skip entire chapters, but most of what makes 5 through 8 boring and repetitive is optional content that you can ignore. I would say it's worth going through everything in chapter 7, though, because the tweaked boss fights are pretty fun and challenging, and you can steal fantastic equipment from them.
