Except then you are exposing your IoT devices even more. VLAN’s still let you properly firewall the devices and control in/out connections to WAN.

One way of mitigating this is (assuming you have the right equipment!) is to host IoT devices on a completely different VLAN and subnet. You then create a rule to allow communication from the primary VLAN to the IoT VLAN, and actively block traffic going the other way.
