After trying bagna cauda over some split hard boiled eggs, on bread, with arugula, a la Nancy Silverton's sandwich book, I just can't get enough of the stuff. The really nice thing about it is that it solidifies into a kind of butter when you refrigerate it, so it keeps fairly well.

I do something a little similar, but with bagna cauda, which is a mixture of anchovy, butter/heavy cream, olive oil, dash of lemon juice, and lots of garlic that is slow cooked in the oils/fats until they are mush. I toss it in pastas, cooking vegetables, meats, or as a spread for a sandwich. I should be 500 lbs.
