Of course. The V10 has myriad advantages in this situation. Most folks just don't realize how much the advanced driveline contributes to this sort of thing.
I saw the original forum which featured that video. It is in fact a V10 diesel. The thing is though, it would still win if it were a gasoline V8, or even a V6.

Nahh. Probably an automatic car that he had left running and in neutral. Autobox shift levers in older cars like that can easily become loose over the years; so much so that just the vibrations from the engine running can make the shift lever pop into reverse.
Because you are working in a shop with a level floor. The car shouldn't generally roll off on its own. Leaving the car 'roll-able' like this makes it easier to work with. You can nudge it around if you need to move it slightly, get it lined up with your lift, etc.
