You don’t understand how ResearchKit and CareKit work. The data is collected without any attached name, address or any other personal identifier. While that data might flow through Apple servers, it actually ends up on the servers of the app host - e.g. Stanford for the giant heart study, Mt. Sinai on the diabetes…
