Effing fantastic! I used the velveting technique-literally adds 2 minutes and ups the authenticity of it exponentially. I used broccoli, carrots, red cabbage, white onions, scallions, ginger and garlic. I ended up cooking the white onions and scallions together, then the broc & cabbage & carrot mix, then the ginger
