One more small thought - grapefruit are also brilliant for these (I’ve tried lemon and they are really hard to peel, IMHO). You can use the leftover peeled grapefruit to make curd.

A small recommendation - do NOT throw out your now perfectly delicious, gift-from-heaven orange syrup. Toss in some ginger and jar that gorgeous syrup as another gift - for yourself - with seltzer or alcohol.

I roasted sweet sapphire grapes tonight... I used some olive oil, salt, herb mix (Penzey’s) and then threw in some rosemary for good measure. I could drink that warm grape liqueur... the grape flavor is amazing. The best way to use just-wrinkly grapes.
