I think what you're missing is that, if this story is true, there is apparently a social cachet that owning an iPhone has in Chinese culture that is absent here. What they're doing is likely no more crazy than the American willingness to spend more than $15 for a bottle of wine, or more than $60 for a pair of sneakers

The smash technique used by Shake Shake (and others) is easier, provided you can get a hot enough cooking surface.
