My point is that they're small relative to the capabilities of a 7 MP camera. MPs are not a useful metric for anyone but advertisers or people who don't know any better.

The point isn't to simply make your textbook digital (which has already existed for years). The point is to make these digital versions more useful than the print versions by harnessing the advantages of a digital platform, which had yet to be done, until now.

Instagram pictures are small, so a megapixel requirement would be pointless. This article referred to quality, which is more accurately measured in sensor size first, lens quality second.

Probably because 1280 x 720 is an odd size for tablets. Believe it or not, the iPad's ratio is right where it should be for a tablet.
