I think on the milk thing, the implication is that Chuck doesn't have a refrigerator. We saw the cooler filled with ice in Uno keeping a few perishable foods cold.

They were at the diner and Patti was all like "remember the things you used to tell me" then she gets a doggie bag, poops in it, and drops it off at her exes house. It come up again at the cabin where she was lik e"I used to tell Laurie everything" etc.

Patti being Laurie's client wasn't out of the blue, it was telegraphed during the diner conversation a few episodes below.
