important note about the garlic press: you don’t have to peel! Unpeeled cloves go in, pressed garlic comes out, papery peel stays behind. you’re consolidating two steps that are time consuming and often loathed (esp for new cooks) into about 2 seconds of work. press away!!

i live in NJ. i can locate a very fine bagelry in every direction. yet, i make a variation of these all the time. mine are not “two ingredient bagels” because the dough also has salt and baking powder, but these help so much with the flavor and the bake. with this in mind, some thoughts:

Can’t overstate how nice it is to have a fuckton of bowls for prep. they nest when storing, are easy to clean, and can be used for serving in a pinch.
