Maybe not, but the show's quality certainly justifies it.

I think they reason they do that is so there can be a Reveal Shot when the camera finally shows the human remains in the crematorium. Not very realistic in this context, but shocking if it's handled well.

Yeah. Elementary has been pre-empted so many times in the last few months that I'm starting to think CBS just wants an excuse to cancel it, which would (admittedly) be stupid. I really think the show could last as long as, say, Criminal Minds given the right treatment.
