I don't get the connection between ceiling fans and smoking. Smoking in bars and restaurants is illegal in most of the US too. I think we have ceiling fans because they are the best thing for cooling a room aside from an AC.

I actually thought that Lorelai's inability to cook made sense. She had servants throughout childhood and left home to live in a decorated shed with no kitchen at 18. When would she learn to cook? Or even have time to learn?

People have been having to set aside bits of their culture to conform with society for centuries. Millenia? Whenever conquests started? It's nothing new.
