It isn't a very thorough analysis, it's just a picture of a particular moment.

Furthermore, he's seen Hannibal in the suit first-hand. Now he's dead certain who Hannibal is, and, if he survives, it will be interesting to see how his character is affected.

He still had to kill people, even if he wasn't serving them, to make Jack suspicious. So the Rolodex is kind of justified. Now, him pulling out a recipe right after the Rolodex, that was a definite "fuck you".

It's because he's always been jealous so he was just never charmed. It made him more objective, surprisingly.
To me the reason Hannibal left Miriam for Jack to find is clear: he wanted to see what will happen. Can't say I blame him, so do I.

Yes. I think he said to tell the waiters to get food from the kitchen to get Jack to doubt him even further. And then, when he was proven "wrong" he would feel worse about it and more convinced of his innocence.
