Jesus: It doesn't make sense to refer to what you want as "optical" centering. A better word would be "perceptually" centered. Considering the many minor graphical tweaks in iOS 5, it is mildly surprising that this one didn't make it in.

@BazookaJoe: There really isn't an equivalent technique, unfortunately. Part of the appeal is that you are rotating the focal plane with respect to the sensor / film and also letting all kinds of nasty light bleed in through the gap.
I didn't know this had a name. When I've done it I always just thought I was "doing it wrong." :)
