Because it looks good! The way it reacts to a car driving across it, or a person running through it. The grass by itself might not be that big of a deal, but when you take away small detail after small detail, it accumulates and worsens the larger visual experience.

Without grass quality on high, it must look God awful when you have to look at the garbage grass texture underneath it all the time.
