My point is that it’s not as unique as you think because the Avalanches did it, and arguably did it better, since they composed legitimate songs as opposed to providing beats. What am I missing here

Have you ever listened to the Avalanches? The ENTIRE album is samples, there are no original vocals in there. I’ll agree with you that such an album is impossible today, but Since I Left You came out like 11 years later and iterated on it in every possible way.
