I’m not sure but my guess is that animals tend to hork it down raw immediately after birth, fresh from the sterile womb environment. It sounds to me like the bacteria in the article were a result of poor preservation/processing rather than coming from the organ itself.
No. You have skin for a reason. You are covered in bacteria at all times.
