I suggest you invest in a cast iron smoke box. Mine is about a foot long six inches wide and 3 inches deep. It takes forever to start to smoke but once it does it keeps doing it for 2-3 hours with a steady nice smoke.
I use whole peppercorns and crack them between 2 sheets of foil rolling a rolling pin over them. It gives some really nice crunch of peppery goodness. Toss in a pinch of white pepper to finish!
