Wisconsin Brick cheese can be hard to find. I’ve not seen it in any stores around here (Detroit, ironically!) but you can get it online. it’s really key to the style; it has a buttery flavor to it and it’s higher fat which contributes to browning and crisping the crust.
I usually don’t use mozzarella. Sometimes I sprinkle some on top. If you can get the real brick cheese get that. You want a cheese that will melt and crisp on the outside of the crust. It easiest to push the cheese on the edge of the pan when they are cubes as well.
This recipe is my go-to. I made it last night. I often replace the brick cheese with muenster and monterey jack. I also sometimes use store bought pizza sauce and add a lot of red pepper flakes and parsley. I go round or square depending on which pan I feel like using.
