Very interesting concept. Though it seems like imparting hop flavors or even aromas would be more difficult to finesse via yeast. Think about a Hefeweizen, the banana and clove signature of that beer is dependent on yeast, under / over pitching, temperature control are factoring elements to how much of those flavors

Not necessarily, if your dry hopping you can get a bit of haze then if the beer is also bottle conditioned you’ll get more.
