The only problem with that thinking is 8-player. You can't do 8-players with only Pro Controllers. You need at least 3 more controllers, if you have 4 Pro Controllers (+1 tablet). You're options are obviously large, but GameCube is the next best option if you want friends to have a fair advantage in 8-player mayhem.
