Just reminded me of Michael Pollan's book The Botany of Desire. It talks about the domestication of various plants, including apples, and their contribution to that evolution. It's pretty damn interesting.
We love these. They're a good compromise for those who like tart and crisp (Granny Smith) and those who prefer sweeter (Honeycrisp). :-)
