I made a batch last night that turned out ok! They rose (which was always my problem) but they aren’t quite as tender as I’d like. Still though, that was kind of the major hump I needed to get over so hopefully I can get that last bit fixed.

Cutting down on the fat can make it harder to emulsify but I like to use my immersion blender anyway and it will do that shit easy, even with less fat. I’ve always used probably closer to 1.5:1 or 2:1 since I like vinegar so damn much.
When I worked at chili’s we got the half off meal before or after our shift. Seemed fine to me and sometimes managers would just comp the entire thing if they were running a contest of whatever sort they do to drive sales. Also, the new menu item thing usually led to free stuff.
