Haven’t tried it with mayo, but one trick that might help: put the whole cloves in vinegar then blend. That gives all the garlic flavor without the pungency raw garlic can get when chopped while exposed to air. Roasting the garlic or cooking it in the oil you plan to use could also work.

I thought the stuff I found in the states tasted a little different. Now it makes sense.

Not sure how that disagrees. Water at the point of contact with coffee should be in that 200 degrees F range. It’s often served at that temp which means it was likely brewed even higher (boiling or close to it) or left on a hot plate. The temperature at which you brew it is what matters. You can let it cool a few

Could also mention here that people adding cold milk/cream/etc to coffee leads places to make coffee that’s too hot to compensate. Higher temperatures destroy the flavor of coffee.
