I initially voted for FocusWriter (free), but I'd also like to point out that Bean (free) has a lovely fullscreen mode that is much more configurable (yes, the configurations can distract you) and JDarkRoom is a free clone of WriteRoom.
@Marand: I tried using vi in fullscreen (with an X11 tip Lifehacker posted awhile back), but something about it—maybe the fullscreen, maybe the fixed-width font, maybe the ASCII-only character allowance—prevents me from using it full-time.
