yes, you CAN make sourdough babka (or sourdough anything, really). It will likely take a longer time to rise (commercial yeast is super-optimized). The flavor could prove interesting. Maybe the tang of your starter will work with the flavor. Maybe not. To minimize the sourness, build your levain with lower protein…
