The sheer amount of local money and clout (i.e. potential for future money) at stake really can’t be overstated. Whole family fortunes and lifestyles rely on this sort of casual, expected. cost-of-doing-business graft.

I get that carmelizing onions is a long pain in the ass process... But every single time I see a method of shortening it, there’s always a tradeoff. In this case, increasing my cleanup by at least 2 jars and lids and one coutertop appliance, and I *still* have to use a saucepan or skillet to brown them.

No. Really, REALLY good uni is sublime. I’ve had it maybe 4 times. It makes me close my eyes and go to a happy place.
