Thanos also has a scene or two in GotG 1, but you’re still right that none of it contradicts what they did in Infinity War.

My theory is that Endgame is going to show a very different Thanos, someone who initially rationalized his actions as being for the good of the universe, but once he’s had the Gauntlet for a while he gets around to admitting that he really did it all for Death.

I’m not claiming it’s the one, true answer or anything...but (in my head, at least) I can just about make it work if I ditch the definite article...

He never learns any responsibility - he only fights crime trying to find the guy who killed his uncle and segues into fighting the Lizard just cause he’s there. He ignores his Aunt and Captain Stacy for no reason and is just insanely selfish the whole movie with no learning

It doesn’t feel like a retcon to me at all. MCU Thanos really has no canon personality until Infinity War: he has no lines of dialog at all in Avengers 1, and in Avengers 2 he says one entire sentence. Nothing in those films contradicts the idea of Thanos as a wannabe universal savior/delusional mass murderer*.
